Chicken Satay and Peanut Sauce

A few nights ago I made homemade Thai food it was so good and easy!  I made the marinade early in the morning and allowed the chicken to marinate for 6 hours before grilling this picture was taken just before grilling…

The peanut sauce was made 30 minutes before serving but it keeps really well because I have been eating it all week with the leftover rice and chicken…

img_9567we ate outside on our patio and enjoyed an early summer thunderstorm, everything turned out so well it tasted so much like Thai food from a restaurant I am so excited to make this dish again…

img_95711Chicken Satay:

Ingredients

2 (6-ounce) boneless skinless chicken breasts (cut into strips and pounded with a meat mallet to tenderize before marinating)

1 Cup unsweetened coconut milk (Thai Kitchen brand)

2 cloves fresh garlic, minced

2 Tablespoons finely chopped fresh cilantro (from our garden!)

2 Tablespoons fish sauce

2 Tablespoons curry powder

1/4 teaspoon fresh ground black pepper or to taste

Kosher salt, to taste

1. combine coconut milk, garlic, cilantro, fish sauce, curry powder and pepper in a large bowl.  Add Chicken strips and marinate for at least 30 minutes or up to overnight.

2. Thread the marinated chicken strips onto soaked skewers; season with salt. cooks for about 3 minutes on each side on a medium-high gas grill, make sure to oil the grill with canola oil prior to grilling to prevent sticking.  Serve warm with peanut dipping sauce and cucumbers.

img_9573Peanut Dipping Sauce

Ingredients:

1/2 cup unsweetened coconut milk

1 (packed) Tablespoon light brown sugar

2 teaspoons Thai red curry paste (I used Thai Kitchen brand)

1 1/2  teaspoons fish sauce (I also used Thai Kitchen brand for the fish sauce)

1 1/2 Tablespoons creamy peanut butter (I used smart balance brand peanut butter)

1/4 teaspoon paprika

1 clove of fresh garlic minced

1 Tablespoon crushed roasted peanuts for garnish (I omitted this and it was still delicious)

1. Shake the can of coconut milk vigorously to combine the thick cream with the thin milk. Combine all of the ingredients except crushed peanuts in a small sauce pan over medium heat; stir to combine.

2. Bring to a simmer and cook until slightly thickened, about 3 minutes.  Taste and adjust the seasoning as needed. (I didn’t adjust anything it tasted great to me)  the recipe notes: if the sauce breaks or becomes oily, vigorously whisk in 1 Tablespoon of peanut butter to re-emulsify, this didn’t happen to me either.

3. Allow to cool before serving, serve at room temp.  I also heated my peanut sauce the next day and had it over Jasmine rice it tasted good hot too.

Farmer’s Market kick off!

Saturday was the first day for the Salt Lake Farmer’s Market and my friend Lori and I were there to greet it with open arms!  Although it was more of a rainy Oregon day we still had a good time getting fresh veggies and sampling yummy foods from all the vendors, here is Lori at the Wyomatoes stand making an early season purchase of tomatoes, yum!

More visitors!

Dan and Kathy came back down to visit us on their way to Southern Utah, luckily I had a few days off so I was able to tag-along with them while they explored the SLC area.  Jas was able to hang out a little bit since the ambulatory clinics at the VA were not too demanding unfortunately he is back to doing the 30 hour call schedule every fourth day.  While they were here we went to the Red Butte Gardens which are just a mile or so from our house, they had several different themed gardens I think the favorite was the Children’s Garden; so many cute ideas! Here is a picture of Kathy and I hanging out in one of the “playhouses” they had for the kids…

img_7791You can see the cute little chairs they had carved out of stumps and the plants were trained to grow over the wire fencing which provided the structure for the playhouse, it was so nice and cool inside because of the plants perfect for hiding out on a hot summer day!  They had a large tunnel trellis that was shaped like a snake, you entered through his mouth and then you could wind through his whole body like a maze, here is a picture of the inside of the snakes belly…

The next day we went up to Big Cottonwood Canyon and did a hike to Solitude Lake, here is a picture of Jason going out on a limb…

It is so different seeing the white bark of the Aspen trees, sort of looks fake to me…

img_7834We ended our day by driving down into Heber City on the other side of the Canyon and then swinging past Utah’s Bridal Veil falls, it was impressive but my goodness were there a lot of people standing at the base of the falls sort of like going to Multnomah falls but worse because here people were splashing around in the water, sort of takes away from the beauty.

The next day we went up to Little Cottonwood Canyon (this is for sure my favorite canyon) I love the steepness of the peaks, it really makes me feel like I am in Switzerland.  Dan, Kathy and I did a hike to Cecret Lake which is in Alta (Jas had to work :( )…

img_7868It was a nice little hike although it will probably be even better in early fall once all the kids go back to school.  Then we went over to Snowbird and took a ride on the tram which takes you up to the top of Hidden Peak which is 11,000 feet!  It was sort of scary but awesome at the same time here is a picture of Dan filming our ascent…

Can you believe that thing fits 125 people!  Our friend Joe from Ohio comes out to ski in Utah every year, he tells me that it is insane in the winter time, they pack skiers and boarders in there with all their equipment, you can barely even move!  It is much less crowded in the summer lots of elbow room and you can walk around to get all the different angles, not sure how I would handle being packed in there in the winter.   We ate our lunch on the top of Hidden Peak…

Then we took the chairlift down to the bottom, I was so hoping that we would see another moose but we didn’t, I think I may have spoiled myself because now every time I go up there I am going to expect to see one!  We had a great time with you guys, thanks for coming out again!

Good news, garden foe, biking trails and tales from the nook!

On Friday I found out that I got the job at the University Hospital on the trauma/acute care floor.  I am really excited to start working, I have been feeling sort of like a slug lately since I have been in limbo.  My start date is most likely going to be June 29th so I have one more week of freedom before I enter the working world.  It will be nice and sort of funny to be working at the same hospital as Jas, we will be able to hopefully eat dinner or lunch with each other on occasion and more than likely I could have to call/page him about one of my patients sort of weird but at least it won’t be scary!  We had planned to go hiking/camping this weekend but we were rained/stormed out so we ended up staying home and doing things in our neighborhood.  Saturday we had a lot of rain and during a lull we went outside to inspect our plants and make sure none of these were munching on them….

Okay so we didn’t actually find this baby on top of the Mama but couldn’t resist posing them before we disposed of them in the trash can.  These two were actually not an immediate threat to the plants since they were under the bird feeder on the opposite side of the garden munching on some fallen seed but still snails surprisingly can cover a lot of ground so we took no chances.  Today Jas and I went mountain biking, it was my first official time mountain biking it was a huge workout.  We went on a really long trail with a lot of steepness, it was hard but fun and I am sure that I will be sore tomorrow.  The trail that we went on took us behind the University hospital and then popped us out into a really nice neighborhood on the other side, here is a picture of the Hospital where both Jas and I will be working for the next three years…

So I know that I was going to post some pictures of the inside of the house so here is one to tie you over, this might be my favorite thing about the place, the kitchen nook…

img_71891As you can see my phone with a cord is conveniently located near the nook so that I can sit and talk comfortably inside my cozy little space.  Last night I was lying down on one of the nook benches and decided to look at the underside of the table, I am not sure what I was expecting to find maybe some old paint chips I don’t know, but what I found was the handwriting of a young girl proclaiming her love for different boys, luckily she dated each entry so it was interesting to see her go back and forth between who she was “in love” with at the time, here are a few quotes from the underside of the nook:

Those are just a few of the love proclamations I found, I thought this was so cute and it was sort of bittersweet thinking of the young girl who wrote these who was probably in her early teens at the time might be in her late 70’s now.  I love old houses and all the stories they have to tell.  This reminded me of the wooden pole (actually a supporting beam) in the basement of my middle school/high school friend Lindsay’s house, our group of girl friends use to scribble similar “love” proclamations on the pole, it has since been dry-walled over but Lindsay told me that she likes to think that someday someone will find our messages just how I found Elaine’s :)

Ensign Peak

Yesterday evening we hiked Ensign Peak which is apparently the butte that Brigham Young climbed to look out over the valley and plan the city of Salt Lake he apparently said “this is the place” when he saw the view and envisioned the plan for the city (just a little SLC history for ya!).  It was a quick steep jaunt to the top, there were a lot of people up there, since it is a special place for the LDS folks there seemed to be a lot of church (or ward groups as they call them) up there talking about the history of the viewpoint.  It was a nice view despite the clouds, we have been told by many people that Salt Lake is having some very unseasonable weather, lots of rain and thunderstorms which is keeping the foothills nice and green.  We like to think it is Salt Lake’s way of welcoming us to our new home (for the next three years) but I think it might be short lived because highs in the 80’s are in the forecast for next week which my tomato plants should appreciate!

Road trip #2

This was my second time driving across the country this year and my fifth time doing it all together, each time I have done it I have gone different routes so I am seeing new things.  When we moved Jas out to Ohio four years ago we actually drove across Canada which was the most scenic of the treks by far.  I didn’t take very many pictures of the beginning of the trip since the Midwest is pretty uneventful as far as scenery goes, on our second day of driving we stopped in Kansas at a park for a while to stretch our legs and so Jas and his Dad could play a round of Frisbee golf.  The park had a weird layout for how huge it was there wasn’t any kind of main access area but it did have a corral of Buffalo so Kathy and I hung out with them for a while trying to get a good picture although the double fence made it hard to get close to them.

As we were driving through Eastern Kansas heading into Colorado we had to drive through a huge system of storms.  There were a lot of weird looking clouds and the severe weather alert kept coming up on the radio announcing warnings for different counties which was scary since we didn’t really know what counties we were heading into since we didn’t have a map!

Later we looked up the name for the clouds that we saw; these are Mammatus clouds and they are indicative of very unstable air.

It was a very eerie experience driving through those clouds feeling like a tornado was going to touch down at any moment and send us flying to our deaths.  When we got to Jason’s Great Aunt Jeanne’s later that evening we watched the news and there were 5 confirmed tornadoes in the same area that we had been driving through.    We spent two days at Aunt Jeanne’s in Denver, she is a very neat lady full of spunk reminds me a lot of Grams I think those two would get along well together with their love of gardening and abundance of energy, here we are having lunch out on her back patio…

Jason had interviewed for residency in Denver as well and Jeanne tells us that she was hoping for us to get back to Portland but if that didn’t happen she was secretly hoping for Denver, I thought this was funny since Grams had told Jason and I the same thing after finding out that we were headed to Utah she secretly was hoping for Columbus if he did not get into the Portland program.   Jason and I drove to Boulder in the afternoon and did a quick tour of the Flagstaff area, it was a cloudy afternoon so the views of Boulder from up there and the surrounding mountains were not the best but it was still fun, here is a picture of us sitting on a boulder looking out at Boulder.

Lots of really pretty wildflowers in bloom up there, it is always fun to see what the different kinds are compared to what we have in Oregon…

The next day Jas, Kathy, Dan and I went to the Denver Botanical Gardens which was fun but I think we all agreed that they had nothing on Butchart Gardens in Victoria B.C.  The tropical gardens are always my favorite, reminds me of living at the OSU Greenhouses, here is the inside of an Angel’s Trumpet (Brugmansia )

The next day we left Denver and headed through the mountains towards Utah…

We arrived in Utah took us about 9 hours to drive from Denver to Salt Lake there are not many large towns until you reach Provo.

Surprisingly the truck was able to back up into our narrow driveway making unpacking a little easier…

I love our new home, there is so much for us to explore here I am sure three years is going to wiz right by.  Dan found a system of trails that is within walking distance from our house; here is a picture of Jas perched on a rock chair looking out over the valley…

Good Things

Lots of good things to report on…Kelsey and Michael got married last weekend (Kelsey is Jason’s sister) it was a really nice wedding and they lucked out with some awesome weather!  I snapped just a few pictures this one was before the wedding it is sort of out of focus but I thought it was a nice shot and I like how Kelsey’s dress was glowing.  Also the night before the wedding I got to meet up with my middle school/high school pals Erin and Lindsay which was really fun to see Lindsay again and see Erin for the first time in a few years.

After the wedding Jason, Steph, Ed and I went to Sauvie Island and hiked out to the lighthouse, it was a great birdwatching hike, very flat with lots of meadow grass, afterward we went back to Jason’s parents’ house for a campfire with Dan had some s’mores and good conversations and then we camped out in the backyard under the stars.  The next day we went up to Goldendale with Dan and Kathy, we left sort of late and rolled into the Goldendale Observatory just in time to get in line to see Saturn through the telescope!  This was way better than seeing M3 the previous weekend, we were able to see Saturn’s rings and two of Saturn’s moons!  I think I might be getting into this star gazing thing, lucky for me Salt Lake also has an observatory too!  The next morning we took our time exploring around the cabin, finding creatures and eating bathroom mints for breakfast :)

frog and stoolBacktracking a bit, one of Kathy’s chickens decided she wanted to sit on eggs and she found her one day off somewhere sitting on a stack of 30 eggs!  (none of which were fertilized) So Kathy gave her some legitimate eggs to hatch and she did a great job and lucky for me I got to be around when they hatched!  It was fun going out to the barn and checking on the progress sort of like being a chicken mid-wife.

Early on Tuesday morning Jas and I started driving to SLC, we left Beavercreek at 5:30am and got into SLC at 6pm, not a bad drive at all!  We moved in some of our stuff and  judging by the big grin on Jason’s face he was shocked and excited about how wonderful our little house is.  The next morning we went up to the University hospital so that I could meet with the nurse recruiter and then she took us on a tour, it is a very pretty hospital huge windows in all the rooms with mountain views out of all of them seems like if you had to be stuck in the hospital this would be the one!  I also got called for an interview for the trauma/acute care position that I applied for so I have that coming up which is exciting because it sounds really great and the University is the only level 1 trauma hospital in the surrounding region so they are sort of a big deal when it comes to traumas, burns etc. which means I would get to see and learn a lot.  After our tour of the hospital we explored a bit and scoped out the neighborhood we couldn’t get over the mountain views they make everything beautiful even ordinary intersections!

awww mountains!We left SLC early Thursday morning and flew to Ohio to finish packing up our stuff and so that Jason can graduate next Thursday!  Sort of crazy that four years went by so fast, it will be sad leaving Grams and AK; it was nice being close to family.  We are looking forward to our new adventure in Utah, we leave a week from tomorrow and will be stopping in Denver to spend some time with Jason’s Great Aunt Jeanne.
