Chicken Satay and Peanut Sauce

A few nights ago I made homemade Thai food it was so good and easy!  I made the marinade early in the morning and allowed the chicken to marinate for 6 hours before grilling this picture was taken just before grilling…

The peanut sauce was made 30 minutes before serving but it keeps really well because I have been eating it all week with the leftover rice and chicken…

img_9567we ate outside on our patio and enjoyed an early summer thunderstorm, everything turned out so well it tasted so much like Thai food from a restaurant I am so excited to make this dish again…

img_95711Chicken Satay:

Ingredients

2 (6-ounce) boneless skinless chicken breasts (cut into strips and pounded with a meat mallet to tenderize before marinating)

1 Cup unsweetened coconut milk (Thai Kitchen brand)

2 cloves fresh garlic, minced

2 Tablespoons finely chopped fresh cilantro (from our garden!)

2 Tablespoons fish sauce

2 Tablespoons curry powder

1/4 teaspoon fresh ground black pepper or to taste

Kosher salt, to taste

1. combine coconut milk, garlic, cilantro, fish sauce, curry powder and pepper in a large bowl.  Add Chicken strips and marinate for at least 30 minutes or up to overnight.

2. Thread the marinated chicken strips onto soaked skewers; season with salt. cooks for about 3 minutes on each side on a medium-high gas grill, make sure to oil the grill with canola oil prior to grilling to prevent sticking.  Serve warm with peanut dipping sauce and cucumbers.

img_9573Peanut Dipping Sauce

Ingredients:

1/2 cup unsweetened coconut milk

1 (packed) Tablespoon light brown sugar

2 teaspoons Thai red curry paste (I used Thai Kitchen brand)

1 1/2  teaspoons fish sauce (I also used Thai Kitchen brand for the fish sauce)

1 1/2 Tablespoons creamy peanut butter (I used smart balance brand peanut butter)

1/4 teaspoon paprika

1 clove of fresh garlic minced

1 Tablespoon crushed roasted peanuts for garnish (I omitted this and it was still delicious)

1. Shake the can of coconut milk vigorously to combine the thick cream with the thin milk. Combine all of the ingredients except crushed peanuts in a small sauce pan over medium heat; stir to combine.

2. Bring to a simmer and cook until slightly thickened, about 3 minutes.  Taste and adjust the seasoning as needed. (I didn’t adjust anything it tasted great to me)  the recipe notes: if the sauce breaks or becomes oily, vigorously whisk in 1 Tablespoon of peanut butter to re-emulsify, this didn’t happen to me either.

3. Allow to cool before serving, serve at room temp.  I also heated my peanut sauce the next day and had it over Jasmine rice it tasted good hot too.

Spring is in the air

The days are getting longer, the hills are greener and my garden tools are getting anxious to get growing!  I was told that once there is no longer any snow on the Ochre Mountains (that is the name of the range to the West of SLC) then you can begin to plant your garden without fear of frost.   We might have one more snow day ahead of us but man it feels and looks like spring around here!  Taking inventory of the yard I found a giant Mullein plant which is a desert thriving, drought loving easy to care for garden treat, it will likely bloom next year which will be cool since it shoots up a stalk that can reach a height of 10 feet!

I planted a few pansies and they have held strong through three snowfalls yet again proving they are tougher than their namesake…

img_9448I planted some calla lilies along the driveway strip that we cleared out last summer, I am still working on that area so no pictures yet but I will be looking forward to my sorbet assortment of callas to pop up in the late spring/early summer.  Jason and I had some friends over for a bbq yesterday after yard work and a long bike ride.  I was in the mood for pie so I tried out Jason’s Great Grandmother Atwood’s no fail crust recipe (thank you Kathy for the recipe cards in my Christmas stocking!) it turned out great!  I was really hoping for peach pie but those aren’t in season yet so I went for apple instead…

I have been having pie for breakfast, lunch and dinner, it kept me going on my long and ridiculously busy 12+ hour shift today.  I am hoping that I will have time to work on the Nook painting project Thursday so long as I am not totally exhausted after working for three days in a row, ugg.  Anyway, I know I shouldn’t complain, so I have been chanting to myself in the morning when I wake up for work “I love my job, I love having a job, I am good at what I do” and this makes me feel better at least for a little while :)  I have been looking into internships to advance my nursing career and of course the NP program at University of Portland is on my tentative plans for when we move back to Oregon.  time to go have some pie, happy spring everyone!

It is December already!

How the time flies when you have so many visitors!  I am seriously amazed by how many people have come to visit us in SLC, feel sort of spoiled too, it will be sad when people are sick of coming here but until then I am living it up!  In November we had Lindsay for a few days and luckily I also had some days off work so we were able to explore SLC unrestricted!  Lindsay, Jason and I hiked Grandeur Peak one day…

img_8428We also had a fun time exploring the SLC night scene which included a sad and hilarious attempt at “bar hopping” we ended our evening by performing Journey’s  “Don’t Stop Believing” at a Karaoke bar, it is pretty safe to say we were the only ones with talent, immediately after our performance despite the entire bar’s pleads for us to stay and give an encore, we left the building.  Here is a picture of Lindsay from that night…

img_8436After Lindsay left Steph came into town for Thanksgiving!  We had a good time as well, one of the absolute highlights of her trip was when we managed to come across 7 Newfoundlands at a very posh pet store in Park City, the owner of the dogs (and the store) must have sensed my love for them (I did tell him at least three times “I love them”) and gave us 2 Newfie’s for us to walk around Park City!!!  I was beyond excited, in fact I am still worked up about it, made my month!

I love them!  Walking them that day has only fueled my love and I can’t wait to have one of my own!  One of the Newf’s at the shop was 17 years old which is amazing for a  large HUGE dog and his owner told me that all of his dog’s have lived beyond 12 years of age.   Anyway, I love them :)

Steph and I also made a trip up to Brighton in Big Cottonwood Canyon for a sunny day of skiing.  It was our first day out for the season and our first time skiing in Utah, skiing in the sun = awesome!  I am so use to the miserable wet, cold and windy skiing in Oregon that I had no idea skiing could be so wonderful and enjoyable!

It was great fun, I am excited for more sunny skiing adventures!  While Steph was here she and I worked on a gingerbread house so that we could enter it virtually into the Dukovich-Kreim-Dukovcic gingerbread house contest that our families in Pennsylvania put on every year, this was our submission…

img_8469Oh Yeah we were pretty serious about it, our very own little Whoville!  Steph and I also cooked a turkey and did the whole Thanksgiving feast (mini style since it was just Jas, Steph and myself).  The turkey turned out amazing, although I have to say that while Lindsay was here she and I cooked a full turkey breast in preparation for my first bird and it was by no means an easy task, in fact it was a disaster.  Luckily the second bird turned out and was just wonderful, all credit going to Steph since I had to work the night before Thanksgiving when she did most of the work making the brine and everything else.   This picture is blurry but check that bird out!

Beautiful.  That is what has been going on in my world.  Jas is still hard at work but he is already half way through his first year of residency (woohoo!) the next two years should be much less intense in regards to his crazy schedule, so that is good.  He and I are looking forward to our break in February, we have big plans to explore the parks in Southern Utah, can’t wait!

Furniture Hike and Little Cottonwood

AK came to visit us and it worked out that I had a three day weekend so on Friday I took her on the furniture hike up Red Butte.  We found this cute “remote” on the coffee table, as you can see someone crafted this mock remote that is complete with buttons to either dial up or down the sun, moon or clouds.img_7559

I love that this hike is practically in our backyard!

Yesterday Jas came along with us to explore Little Cottonwood Canyon (this is the canyon that has Alta and Snowbird ski resorts in it), it was lovely up there I can’t wait for ski season it is going to be awesome having world class ski resorts 20 minutes from our home.  Jason already spoiled it with his blog but, while we were at Snowbird we spotted a mama mo0se and her calf!!!  I was so excited I have never seen a moose in the wild before but now I can say that I have seen two!

We went on a hike to Twin Lakes which is a drinking water reservoir nestled between Alta in Little Cottonwood and Brighton which is in Big Cottonwood (elevation 9,991 feet).  It was 2.1 miles to the top with an option to walk 1/2 a mile down to the lakes edge…

When we got home we made eggplant rolls, we sliced them lengthwise, breaded and fried them, spread ricotta and parmesan cheese on them and then rolled them and baked them with tomato sauce over them, a picture before the sauce was poured over them, yum.

Not sure what we are going to do today yet, there is an arts festival in Park City this weekend or we might go see Bridal Veil falls; I have decided that naming a waterfall bridal veil is like naming a lake clear.

I finally finished addressing our wedding invites and got them put in the mail on Friday, I liked using our stamp…I think I may have went a little stamp crazy but I don’t really care, here is a picture of my work station in the nook…

So now I can just sit back and wait for people to RSVP which should be fun because I love getting mail…we are almost two months away from the actual wedding date and it is sort of beginning to stress me out, I still feel like there are lots of little things that I need to do like make a play list.  I have been gradually making a list of songs but it is still nowhere near long enough yet so if you have any suggestions or requests for songs that you would like to hear let me know! Aside from wedding stuff I have just been busy with getting my ducks in a row for starting work technically tomorrow, I have two days of computer training and then I will be oriented on the unit on Wednesday!  I have been taking breaks and working in the garden which is doing fabulous our tomatoes are doing great and I am thinking it might be do to the coffee grounds that I have been sprinkling around them to give them a nice slow release of nitrogen during this crucial growing time or it could just be that things grow well here with the constant sunshine…

Sushi and Mill Creek Canyon

Yesterday I made sushi for the first time on my own, I had learned from Erin when I visited her in Eugene a few weeks ago.  I surprised Jas with California rolls and some mock spicy tuna rolls for dinner (used canned tuna, Sriracha sauce and a touch of miracle whip).  The nook served as a good work station, I think it will be a great space for baking, probably won’t have the itch to do much of that until fall when it cools down.

Sort of amazing how fast you get full on sushi, I was good Erin and didn’t eat any of the scraps while I was making them!  I think they turned out pretty good…

Jason was concerned that the pictures of the nook were not doing it justice so he wanted me to take a picture of him lying down on a bench so that you all can see just how huge and wonderful it is :)  I took this picture this morning before we went on our hike…

This morning we met up with some of the new residents and went on a hike in Mill Creek Canyon, I was surprised by how many trees there were, I don’t know why but I was worried that Utah wouldn’t have enough trees for me but this hike was very reminicent of an Oregon hike…

img_72491It was a nice 5 mile hike with a good viewpoint of the valley but it was sort of hazy so hard to take a nice picture…

Jason starts in the ICU tomorrow, I probably won’t be starting my job until July 5th, I have a lot of things on my list that I am trying to get done before then…trying to finish up a baby cocoon for Alyssa, a belated knit wedding gift for Kelsey and Michael and some other knit gifts that are surprises for a handful of well deserving folks.   I also made plans to help out my new neighbor Nancy with pruning back some of her herbs and drying them.  Nancy is an avid organic gardener and freespirit with a lovely garden, I think she is going to be fun to live next to and learn from.
